Is removing seats legal?

Hello, I'm currently planning to go on a road trip with my girlfriend, and am looking at buying a van or a wagon to put a bed in the back of. Being 6'8" I need as much room as I can get, so I'm wondering what the rules are regarding removing seats in cars. I'm fairly sure it's legal, however I thought it was worth asking.

Also, if anyone has a cheap van or wagon for sale let me know. ;)

Last I heard you need an engineering certificate if you replace the seats to make it 100%. May depend on the state you're in. Anyone care to confirm?
